Imli ki Khatti Meethi Chutney

Preparation time: 10 mins
Cooking time: 10 mins
Serving: 4 person


Ingredients:
Tamarind pulp: 1/2 cup
Jaggery: 3/2 cup
Black salt: 1/2 tablespoon
Resins: 10
Cashew: 10
1 Red chilly, saunf, raii, methi daana, cumin seeds: 1 tablespoon (for tempering)
Refined oil: 12 tablespoon

Method:
1. In a pan take oil, add  red chilly, saunf, raii, methi daana, cumin seeds, resins and cashew nuts; as they splutter add tamarind pulp.
2. When it comes to a boil add jaggery, black salt and let it get mixed and thicken to a consistency of a chutney.
3. When the required consistency is reached pour it in a bowl and let it cool to room temperature.


Enjoy this khatti meethi red chutney with pakoda, chat, papadi or any other snacks; this is surely going to make your snacks taste better.. :)

Gaajar ka Halwa- A classic tempting dessert!!



This season's first home made Gaajar Halwa

Preparation Time: 20 minutes.
Cooking Time: 15 minutes.
Serving: 2 person.

Ingredients:
Grated red carrots- 500 gms
Maawa/Khoya- 200 gms
Sugar- 125 gms
Full cream milk- 1 cup
Desi ghee- 2 table spoon
Fresh cardamom powder- of 3 pods
Cashew nuts & pistachio (for garnishing)

Method:
1. Put the grated carrots in a pressure cooker and let it cook for a whistle, when done take it out and keep at room temperature to get cooled.
2. When the boiled carrots are cooled down squeeze them to drain out excess water from them.
3. Take a non stick pan add ghee let it get warn for 5 seconds and add the squeezed carrots and sugar in it, stir well till the aroma spreads in your kitchen and now add milk and keep stirring for 2 minutes on a very low flame.
4. Add maawa and keep stirring (make sure it is not sticking at the bottom).
5. Sprinkle the cardamom powder.
6. Place it in a bowl and garnish with cashew nuts and pistachio, serve hot.
